I agree that beef does make some good BBQ and am quite fond of BBQ beef brisquit. For that matter, where the heck are you getting BBQ drowned in vinegar? The only way I get vinegar on my BBQ is via a dollop of vinegar based cole slaw on my sandwich. When it comes to ribs there are things to like about both beef and pork ribs and I am happy with either.

I watched a food show a while back where they did a big comparison of BBQ from the different styles prevalent in the US and had a big taste competition and Memphis style BBQ won out over the other regions thus confirming what I already knew.
