The Hound and the Mountain had to die together in fire. It can't be a just one of them watches the other one die. The Hound was born in fire from the hatred of his brother. The Hound died in fire killing his brother and himself.
The way they did the Hound and Mountain fight and their end was perfect.

She will die and the memory of the Targaryen tyrants will be burned in the memory of the people for at least 100 years. This also shows why all of the other dragons (in the past) died out.
